- Inheriting the traditional handmade techniques of the Izumo toji, all Izumo is brewed with handmade koji and pressed in wooden vats. Izumo City in Shimane Prefecture, where the Fuji Brewery is located, is a place where many of Japan's ancient secrets lie. Surrounded by the Japan Sea to the north, the Chugoku Mountains to the south, Lake Shinji to the east, Lake Shinsei to the west, and the Mother River Hii River, the setting of the legend of Yamata-no-orochi, to the center, the city has nurtured a rich food culture in a land blessed with the blessings of nature in each of the four seasons. Izumo Fuji was named about 90 years ago by Shoichi Imaoka, the first head of Izumo Fuji Brewery, with his passionate desire to produce the best sake in Japan, which would be loved like Mt. Today, in addition to the original idea, the name also reflects the desire to "brew Izumo and aspire to make Fuji". Although Izumo Fuji cannot be mass-produced, we will continue to brew good sake that is honestly delicious and brings people together, and food and people together, with all our hearts.
