- Fuji Shuzo, based in Izumo City, Shimane Prefecture, has consistently upheld a brewing philosophy that prioritizes the essence of sake while honoring the intuition of its brewers—using entirely handcrafted koji and traditional tank pressing, among other methods. The land of Izumo, nestled between the Sea of Japan to the north and the Chugoku Mountains to the south, is embraced by the underground waters of the Hii River and abundant nature. In this landscape where ancient history and mythology thrive, guided by the philosophy of “Brewing Izumo, Aspiring to Fuji,” we cannot produce in large quantities. Instead, we blend the bounty of nature with the refined skills of our craftsmen, pouring our hearts into each and every bottle to brew pure sake. We are also actively involved in the cultivation of local sake rice, supporting the environment where the red-crowned cranes dance, and are committed to rice farming in harmony with nature. This unique environment and our accumulated experience shape the character of our sake, and we are proud to present Izumo Fuji—a sake that forges bonds between people and between people and food.

In winter, enjoy crab and exquisite dishes featuring sweet sea bream caught at the local fishing port. For lunch, we operate as "Fukukumo no Gotoshi" (Chicken Ramen). Open Mon, Thu, Fri, Sat, and Sun from 10:00 AM to 2:00 PM. Closed on Tuesdays and Wednesdays.

The inn is located in Tamatsukuri Onsen Hot Spring, which has been in existence since the Nara period (710-794). Guests can experience Shimane's culture through their stay, such as bathing in the open-air baths in all guest rooms, seafood from the Sea of Japan, Japanese sake, and tea ceremony.
