 Wakabayashi Sake Brewery is a small sake brewery located in Onsetsu-cho, Ota City, Shimane Prefecture. Onsen-tsu-cho has long been known as a hot spring town, and is famous for the quality of its hot springs. It also prospered as a port for transporting silver from the Iwami Ginzan Silver Mine during the medieval and modern periods. Wakabayashi Sake Brewery was founded in 1869 in such a town.  Because the brewery is located near the sea, the water used for brewing sake is not from a well, but from a mountain 4 km away from the brewery. The rice used to make sake is mainly Yamada-Nishiki, which is purchased from contract farmers in the prefecture, and many other rice varieties suitable for sake brewing that are produced only in the prefecture.  Kaiharu specializes in sake brewing that emphasizes the flavor of the rice rather than the aroma, and in sake brewing using the traditional "sake yeast" method of making sake. In order to produce sake that brings out the best flavor of the rice, Wakabayashi Shuzo has recently become an all-junmai brewery, meaning that all of the sake produced is junmai (pure rice). The current toji, Ryoma Yamaguchi, is known as the first toji in Shimane Prefecture to revive the "nama-hashiroshi" method of sake brewing, a method that had fallen into disuse until recently. The Wakabayashi Sake Brewery focuses on making sake using the "nama-hashiroshi" method, and most of the sake produced is made using the "nama-hashiroshi" method. Wakabayashi Brewery also offers a wide range of products, including sake made in wooden vats and sparkling sake.
