- Hazumi, located in the center of the Chugoku Mountains, on the border with Hiroshima Prefecture, is a natural retreat. Natural spring water of ultra-soft water, which is produced by the abundant blessings of nature, is used as brewing water. The brewing water is made mainly from locally grown sake rice grown from the same Enogawa River water system. All sake is brewed by hand in traditional wooden vats. The ultra-soft water brewing process produces a fresh sake with a soft, aromatic taste that goes down the throat.
