- We have been brewing sake since 1892 in the village of Mizuho, nestled in the bosom of the Chugoku Mountains, which is sometimes harsh and sometimes gentle. The brewery uses clear blue well water from 40 meters below the ground for its brewing water. For the sake rice used as the raw material, we have contracted with local farmers to grow high-quality sake rice such as Gohyakumangoku, Omachi, and Yamadanishiki (Shimane Sake Brewers Association). (Shimane Sake Brewers Association) Both brothers have returned to the brewery to become toji (master brewer) and kurabito (brewer), producing junmai sake using locally grown sake rice. The main focus of their product development is to make sake that goes well with food and can be enjoyed as heated sake. Their goal is to create sake that is relaxing to drink, and sake that is energizing and life-giving.
