Sake has been deeply connected with local traditions and food culture since ancient times. For example, sake appears as a precious drink in an anecdote about Susanoo no Mikoto's extermination of a giant snake in Iwami Kagura, a local performing art of this area. (Also, Hamada is located on the sea, and since long ago, sake has been sought after to match the abundance of marine products. In Shimane Prefecture, where sweet sake is favored, we chose Tajima Toji as our first brewer because we wanted a sake that was not only sweet but also "sharp," and we thought it would go well with the seafood. We aim to create sake that is supported and loved by a wide variety of people who enjoy sake by developing new types of products while maintaining the traditional taste loved by the local people of Iwami.
