- In 1893, Shintaro Ochiai, the founder, founded a sake brewery in Shimoazabe, Maniwa City, Okayama Prefecture (formerly Shimoazabe, Kitabusa Town, Kaminobusa County), in search of good quality, delicious water. The area surrounding the brewery is also surrounded by nature, with several limestone caves such as Kane-nyuki-ana (Kitabusa), Ikura-do and Manki-do (Niimi City), and fireflies (Genji, Heike and Princess fireflies) dancing wildly from late May to June in the Bicchu River (a branch of the Asahikawa River) behind the brewery.
