- Aihara Sake Brewery is a small sake brewery founded in 1875 in Nigata, Kure City, Hiroshima Prefecture, which flourished as a brewing town. We cannot make a lot of sake. We chose to remain a small sake brewery because we always think about how to make sake that tastes better than it is easy or time-consuming to make, and we aim to do even better. The "moon after the rain" brand is inspired by the image of the moon shining brightly in the night sky after the rain. We aim to produce sake that is "elegant, beautiful, and clear. The brewery's three principles are to brew all products in the daiginjo-style, to keep all products refrigerated, and to use the best ingredients. The lineup is the brewery's flagship product, lavishly using the highest quality sake rice, such as Yamadanishiki and Aizan from the Akitsu Special A district in Hyogo Prefecture, and Omachi from Akaban in Okayama Prefecture. The brewing water is pure underground water from Mt. Noro in Setonaikai National Park. The toji, Atsushi Horimoto, is a descendant of the Hiroshima Toji, who developed the soft-water brewing method. We will continue to brew sake that we believe is delicious.
