- Founded in 1871. Hiroshima Prefecture is located in Nigata-cho, Kure City, a small town surrounded by mountains and the sea. In the brewery, naturally filtered water, known as "Houken Meisui" (famous water of Houken), gushes out from the Noro Mountain and is ideal for sake brewing. The brewery's toji (master brewer) puts a lot of time and effort into brewing each sake, and produces a small amount of sake with no compromises. The name of the representative brand "Houken" comes from the fact that Nigata-cho has been the largest producer of files in Japan since ancient times. The name "Houken" comes from the fact that there were many sword smiths as well as file makers in the town in the past. The main rice used in the production is "Hachitan-Nishiki" produced in Hiroshima Prefecture. It is a dry food sake with a clean quality that brings out the flavor and goes well with all kinds of food. We have tried to create a sake that has a clean, dry taste, and a sense of security that makes you want to have another glass after finishing it. Our brewery's motto is "100% sake, Kiai," which means that 100% sake is not about making the best sake ever, but rather, if we have 100 pieces of knowledge, we will use them all to the fullest! That's what it means. Another word is "Kiai," which means "spirit." The brewing process takes about seven months, which is a long time, and everyone in the brewery is getting tired. It is human nature to cut corners at such times, but "Kiai" is a way to give oneself a boost at such times. With this slogan, we put our heart and soul into every drop of sake we brew.
