- Kanemitsu Sake Brewery, established in 1880, stands in Kurose Town, Higashi-Hiroshima City—a renowned sake-producing region of Hiroshima. Over its 140-year history, it has evolved with the times. Once producing approachable sake for the local community, it reached a major turning point in 2003. It shifted its focus away from "quantity" and toward the single-minded pursuit of "quality." "In pursuit of deliciousness that lingers in the heart." With this single-minded passion, they steered toward small-batch production. Using pure well water (medium-hard water) springing from the brewery grounds as their lifeblood, they lovingly brew with the skill and passion of their master brewers, using a diverse selection of carefully chosen sake rice. Notably, we maintain meticulous temperature control throughout the entire process, from production to storage. This allows the natural carbon dioxide produced during fermentation to dissolve into delicate bubbles. The moment it's poured into a glass, it reveals a freshness as if just born and a refreshing crispness that soothes the soul. The crystallization of this approach is our flagship brands: "Kamokinshu" and "Sakurafubuki". Infusing traditional techniques with innovative spirit, these prized sakes captivate the drinker's heart. At the National New Sake Appraisal, they achieved the remarkable feat of winning the Gold Prize for ten consecutive years, up to 2025.
