The port and salt manufacturing industries are both closely related to the sea, and the sake brewing industry, which developed along with these industries, reflects the climate and history of the area. We place great importance on umami. The abundance of seafood from the Seto Inland Sea in front of us is rich in flavor, and sake with umami multiplies that flavor several times over. Umami is known to have such a synergistic effect.
