It was founded in 1716, the first year of the Kyoho era (mid-Edo period). The origin of the sake's name "Shinrai" comes from the fact that lightning struck the brewery in the past but did not cause any serious damage, and the name was inspired by "Jinseki," a place where a god resides. The name also represents our wish that our customers can drink our sake with confidence. The brewery is located in Jinseki-gun, Hiroshima Prefecture, at an altitude of 500 meters (the highest brewery in the prefecture), which makes for a cold climate comparable to that of the northern Tohoku region. This cold climate and Hiroshima Prefecture's traditional soft-water brewing method are used to create sake with a "rich rice flavor and a cool, refreshing taste. Sake is the best gift that Japan's natural environment has given us" is the theme of our brewery, so we are actively working on the use of the traditional sake brewing process to maximize the expression of the brewery's climate and conditions. We use Hiroshima-grown rice in all of our brewing processes, and we want to brew sake that is honestly given to us by the climate and climate of this region.
