For the "healing sake" that connects us to tomorrow Shintani Shuzo is a small sake brewery founded in 1927, soon to celebrate its 100th anniversary. It is located in Tokuchi, Yamaguchi City, in the center of Yamaguchi Prefecture. This area is the birthplace of Yamada Nishiki, the sake rice variety cultivated in Yamaguchi Prefecture, renowned for its high cultivation techniques and ranking among the prefecture's leading production areas. Blessed by nature and the first-class Saba River, this area boasts high-quality rice and abundant, pristine water. In the past, this small town was home to more than five sake breweries. The underground water from the Saba River, used for brewing, is ultra-soft. Since its founding, the brewery has consistently crafted umami-rich sake with a smooth mouthfeel and robust flavor. Wild boar hunting is also popular here, making this sake a perfect match for game dishes. Long cherished locally under the name "Wakamusume," the brewery transitioned in 2007 when third-generation owner Yoshinori Shintani became the master brewer. He introduced a refrigeration room to adopt year-round brewing. The main brand was rebranded as "Wakamusume" in hiragana, and all sake is now delivered monthly as fresh, unfiltered, unpasteurized sake straight from the press. In 2018, damage to the brewing cellar's beams led to the relocation of a temporary cellar on the same premises. This prompted Fumiko Shintani, the brewery owner's wife, to become the brewmaster. We undertook a complete reevaluation of our brewing process from the ground up, including a complete rebranding with new labels and packaging. Guided by our motto, "Brewing the Seasons with Harmony," we value three key harmonies: harmony among people to brew fine sake, harmony in flavor, and harmony in the hearts of those who drink it. As a year-round brewery, we aim to brew high-quality sake in harmony with Japan's four seasons. As the last remaining sake brewery in the mountainous region of Yamaguchi City, we feel a great responsibility. We are determined to fulfill this mission with dedication.

The cream croquettes packed with chunks of abalone and the rich Aguu pork miso paste are especially acclaimed, pairing perfectly with both sake and rice. The restaurant also boasts an extensive selection of local sake from Yamaguchi Prefecture. Additionally, rare sake not listed on the menu is actually hidden away, making it a gathering spot for sake enthusiasts.
