- "Not sake for getting drunk or for selling, but sake for savoring." We believe that pursuing ever more delicious sake and constantly evolving creates new traditions. Our 220 brewers—the largest team in Japan—continue to challenge themselves daily to advance sake brewing. In spring 2023, our New York brewery was completed. Just like in Japan, we began brewing "DASSAI BLUE" in America using only Yamada Nishiki rice and exclusively Junmai Daiginjo. Additionally, we launched the "DASSAI MOON Project," aiming to build a brewery on the moon and brew DASSAI there, with the goal of improving the quality of life for future lunar inhabitants. DASSAI, crafted in a brewery deep in the mountains of Iwakuni City, Yamaguchi Prefecture, is now loved in over 30 countries worldwide. We aspire to be a brewery that brings joy and color to life.
