- Founded in 1875 (Meiji 8), this is a small sake brewery facing the old Sanyo Road on the Seto Inland Sea in Yamaguchi Prefecture. The toji brews sake in the cold winter months, aiming for "beautiful sake with umami. The freshly squeezed sake is made with an unbalanced design and allowed to mature at a low temperature for one to two years. The sake is designed to have depth, soft umami, and even more sharpness. We are also trying new approaches while respecting tradition, such as "Yohsuke," a sweet potato shochu made from local red potatoes from Yamaguchi Prefecture, and "Ume no Kahori," a plum wine made from local plums.

A restaurant specializing in fugu (blowfish) cuisine, located only a 5-minute drive from the brewery. The warm atmosphere and hospitality is as if you were at your grandmother's house in the countryside. Outside the restaurant is a kesu (fish pond) in which blowfish swim. Thick fugu sashimi, juicy deep-fried fugu, fuguchiri (blowfish stew) with broth, and more, Fugu chiri (blowfish chowder), etc. You can enjoy fugu to your heart's content in a course meal.
