- In 2010, we revived Ōmine Shuzo—which had been dormant for over 50 years—with the hope that, for a region lacking major pillar industries, it would become an industry that connects to the region’s future, centered on agriculture and local resources. Sake and agriculture possess advanced expertise cultivated over a long history. We deeply respect culture and tradition, and guided by the philosophy of “Try new things, Find new innovations,” we aim to use modern technology to create sake that our predecessors could not achieve. Unsatisfied with the status quo or past recipes, we find daily joy in researching sake. With passion and curiosity for brewing, we continue to create sake that expresses the local climate and identity. We hope that our efforts will become part of Japan’s future traditions and culture.
