- The year was 1923. This was a time when there were still no sake breweries in the westernmost part of Honshu. Surrounded on three sides by the sea, the people of Shimonoseki lived their daily lives drinking sake brought in from the sea. We have good food, but we don't have our own sake," they lamented. The people lamented. Then, as many as 445 rice farmers rose to the occasion. We want to drink good sake made from our own rice with everyone. This desire took shape and Shimonoseki Sake Brewing Company was established. Ltd. was founded with these 445 rice farmers as shareholders. It is a rare sake brewery in Japan that is not based on a hereditary system, but is constantly inundated with new ideas. The brewery has a semiconductor engineer, a dental technician, an active lacquer craftsman, and a French trainee from the parachute team. Each of these brewers has his own special skill set. Our tradition is a series of innovations that are not bound by conventional wisdom. Aiming to create sake for a new age.
