Kawatsuru Sake Brewery was founded in 1891 in Kanonji, Kagawa Prefecture. Behind the brewery flows the clear Sada River. The founder, who dreamed of a crane descending upon its underground waters, named the brewery "Kawatsuru" (River Crane) – the beginning of it all. For over 130 years since, we have continued brewing sake in harmony with this land's climate and soil. The foundation of Kawatsuru's sake brewing lies in "rice, water, and technique." Guided by the belief that sake brewing begins with rice cultivation, our brewers themselves enter the fields, earnestly engaging with the unique character of Kagawa-grown rice. We use the underground water of the Saida River, also known as the "Treasure River," for our brewing water, prioritizing the extraction of the rice's maximum umami above all else. The sake quality we pursue is not flashy, but rather a robust umami that pairs well with food and a pleasant crispness. Rooted in the warm climate of the Seto Inland Sea and the food culture of Sanuki, our sake truly shines on the daily dining table. At the same time, we do not merely preserve tradition; we also embrace challenges suited to the times. We actively explore new ways to enjoy sake, such as our low-alcohol "Sanuki Kuraudi." "Like the flow of a river, we wish to move drinkers with sincerity." Carrying this sentiment passed down from our founding master, we remain wholeheartedly dedicated to our sake today. The building, which once brewed sake, has been revitalized as a whole-house rental, offering guests the unique opportunity to experience the history and atmosphere of sake brewing firsthand. With features such as a large cauldron-style bath and a bathing area using the brewery’s water, guests can enjoy a tranquil stay that feels as though they are being “brewed” right there in the brewery’s distinctive surroundings.
