- Ishizuchi, the highest mountain in western Japan. The brewery uses water from the brewery's own well, which springs from Mt. The brewery does not employ a toji (master brewer), but instead carefully brews sake with family members (three brothers), and does not use large machinery. The family believes in making sake with care and honesty, and they do not allow any compromises to be made in their friendly atmosphere.
