- The brewery is located in a small town called Tano-machi in Kochi Prefecture, Shikoku. It is a rural town rich in nature with beautiful mountains, rivers, and the Pacific Ocean, and is blessed with super soft water suitable for sake brewing. Kochi's sake is one of the driest in Japan. Bikuyo is characterized by a slight sweetness, although it is dry according to the analysis. It has a smooth entry into the mouth, a full-bodied aroma, and a good aftertaste, and we are pursuing a food-friendly sake that will not wear you out. The name "Bikuyo" means "beautiful, strong, and gentle man. Our goal in sake brewing is one thing only: to make delicious sake. There is no limit to what we will do to achieve this. We brew sake in the hope that the harmony of rice, koji, water, and yeast, combined with the blessings of nature and the skills that people have developed over the years, will produce delicious sake that will fill the hearts and minds of those who drink it and make them feel happy.
