- Founded in 1877 in Tosa-Yamada Town, central-eastern Kochi Prefecture. Currently led by the fifth-generation owner who also serves as master brewer, the brewery has dedicated itself to ginjo sake production since 1997, striving for higher quality. We produce our flagship brand "Bunka-jin" and the locally distributed brand "Naruko Mai." To achieve a fresh, juicy, and refreshing taste, we strictly adhere to pressing in the sake press (sakafune), single bottle pasteurization, and storage at -5°C. We are particularly dedicated to the traditional sake press method. Though more labor-intensive than automated presses, it allows the master brewer to adjust the stacking of the sake bags and the application of pressure. We view this not merely as squeezing, but as expressing the sake's character, and we will continue to refine this craft. We brew with the hope that our sake will be a cup that complements seasonal dishes, adding color to the table, and also a cup that makes those unfamiliar with sake think, "I came to love sake after drinking Bunkaijin."
