Founded in 1897 (Meiji 30). Eleven like-minded individuals established the business as “Fumoto Sake Shop” with the aspiration to “brew the sake we drink ourselves.” Later, the brewery began using water from a spring known as the “Eternal Spring”—a source that had never run dry, even during the worst droughts, since the feudal era—as its brewing water. Drawing a parallel to the saying “Cranes live a thousand years, turtles ten thousand,” the brewery was named “Kameizumi” (Turtle Spring). We continue to use this local water for brewing to this day. With the motto “Delicious! Fun! Interesting!”, we are a small brewery dedicated to crafting distinctive sake using rice, yeast, and water from Kochi Prefecture. We actively utilize yeast strains developed by the Kochi Prefectural Industrial Technology Center, resulting in sake characterized by fruity and vibrant aromas reminiscent of melon, banana, pineapple, and apple. In particular, we are the only brewery that has continued to use Kochi Yeast CEL-24 since its commercialization in 1998. Our flagship product, “Kameizumi Junmai Ginjo Genshu CEL-24 Nama-zake,” named after this yeast, is beloved by many.
