- It was founded in 1603 in Sagawa as a sake shop for Shigeyoshi Fukao, who entered Tosa with Kazutoyo Yamauchi. The brewery was named "Tsukasa Botan" by Count Tanaka Mitsuaki (Ryoma Sakamoto, the leader of the Rikuentai after the death of Shintaro Nakaoka), a Meiji era patriot from Sakawa, who believed that "Botan is the king of all flowers and should be the best among all peonies. Tsukibotan is also known as "the brewery most closely associated with Ryoma," and has been loved by the great people of Tosa for more than 400 years. In the more than 400 years since its establishment, we are proud to have been loved by many of the great people of Tosa, who changed and supported Japan, and we continue to brew high quality sake that will never disgrace them. We use spring water from the Niyodo River, the clearest river in Japan, for our brewing water, and we even provide guidance on farming methods to secure high-quality sake rice as raw material.

Every year, we hold the "Kochi Shibotan Party" hosted by Shibotan Sake Brewery at three different hotels in turn: The Crowne Palace Shin Hankyu Kochi, Sansuien, and Josaikan. It is a regular inn of the royal family, established in 1874 and located under the castle in Kochi.

The Takashomachi area where Sansuien is located was once the home of warriors who served the Yamauchi family, the lords of the Tosa domain, and the area is home to historical buildings that still carry the scent of the end of the Edo period, including the former Yamauchi family's row house, an Important Cultural Property.
