- Founded in 1922, the brewery is located in Mitsui County, Fukuoka Prefecture, along the clear waters of the Koishiwara River, which flows into Kyushu's largest river, the Chikugo River, in the Chikugo Plain, a region of idyllic rice paddies. Since its establishment, the brewery has continued to make the most of the power of nature to create authentic sake. In 1990, when the storage of sake in single bottles and refrigerated storage were not yet common, Tokutei Meishu sake was already stored in refrigerated storage. In 2025, 23 years after he became the toji of the brewery, he won 22-1 in the National New Sake Competition, and in recent years he has won the competition for 14 consecutive years. I brew sake with confidence because I don't want people to think that I can only make yogurt-like sake with a strong acidity or brown-colored aged sake. We can make sake that wins awards and competitions, but we also make sake that tastes good with food! I would like to brew sake with a wide range of tastes that can be enjoyed from the beginning to the end of a course meal.
