- Founded in the first year of Genroku (1688). Sake brewing began after receiving permission to produce sake from the lord of the Hirado domain. The founder, Chojiheiemon Fukuda, passed down his words, "Sake brewing is made with the heart and nurtured by the wind. The sake has been nurtured by the climate of Hirado and the sake brewing techniques that have been passed down from generation to generation. The city of Hirado, where our company is located, covers Hirado Island and the surrounding area in northwestern Nagasaki Prefecture, and is the westernmost city in Nagasaki Prefecture and the Kyushu mainland. Hirado has a long history as Japan's first overseas trading port, trading with Portugal, the Netherlands, and England, and prospered as the capital of the western part of the country. Today, agriculture and fisheries are the mainstay of the city. Surrounded on all sides by the sea, Hirado is a place where delicious foods gather, not only fish and meat, but also agricultural products grown in the abundant soil. Hirado City is a long and narrow island, measuring 8 km from east to west and 30 km from north to south. Shisabuki-cho, where our brewery is located, is at the southernmost tip of Hirado Island, at the foot of Byobudake Mountain, overlooking the scenic Shisabuki-port. With the goal of "brewing sake from rice cultivation," we aim to brew sake that can only be made in this rich natural environment of Hirado, and to create Nagasaki's beloved sake, "sake that brings a smile to people's faces.
