- The sacred Mount Shishiki stands directly in front of the brewery. Overlooking the azure waters of Shishiki Bay, we have been operating Japan’s westernmost sake brewery since receiving a production license from the lord of the Hirado Domain in the first year of the Genroku era (1688). For 330 years, Fukuda Shuzo has upheld the tradition passed down through 15 generations, embodying the words of our founder, Fukuda Chojibei: “Sake is crafted with the heart and nurtured by the wind,” in harmony with the climate and landscape of Hirado. Hirado City, where our brewery is located, is a municipality comprising Hirado Island and its surrounding areas in the northwestern part of Nagasaki Prefecture. It is the westernmost city in both Nagasaki Prefecture and the Kyushu mainland. Hirado City has a long history. As Japan’s first overseas trade port, it began trading with Portugal, the Netherlands, and Britain, flourishing as the “Western Capital.” Today, agriculture and fisheries form the backbone of the local economy. Surrounded by the sea on all sides, the area is a hub for delicious local produce, offering not only fish and meat but also an abundance of agricultural products cultivated in the rich soil. Hirado City is a long, narrow island stretching 8 kilometers from east to west and 30 kilometers from north to south. Shishiki-cho, where our company is located, sits at the southernmost tip of Hirado Island. Our brewery is situated in a scenic spot at the foot of Mt. Byobu, overlooking Shishiki Port. ~Expressing this land where people have lived alongside the sea and with gratitude for it~ Through our brewing, we aim to create a one-of-a-kind sake that can only be produced here by combining “delicious sake” with “the region.” Centered on “brewing that expresses the sea of Hirado,” we will continue to explore new possibilities. Fukuda Shuzo’s mission is to pioneer new possibilities for sake through “Fukumi” and to continue brewing flavors that will be passed down to future generations.
