酒蔵について
A designated tangible cultural property where Mozart’s classical music plays. The smallest and last remaining sake brewery in Kitsuki City, a Global Important Agricultural Heritage System (GIAHS) site. In the hope of creating sake that is even more delicious and beloved, we have been brewing sake under the name “Chie Bijin” since our founding in 1874, inspired by the name of our first proprietress, Chie. Sake is the very essence of Japanese culture. The three essential elements for sake brewing are water, rice, and the brewer’s heart. We use high-quality natural water drawn from 200 meters below the brewery and primarily local ingredients to practice “produce local, consume local” sake brewing. “Chiebijin” has been beloved by the local community since our founding. The “Chiebijin” brand, launched by the current sixth-generation owner, is now distributed to authorized retailers nationwide and exported overseas, enjoyed by people of all ages and cultures. We believe that sake brewing continues until the sake reaches our customers’ lips. With the motto “Harmony brews fine sake” in our hearts, all of us at the brewery will continue to strive for excellence.
