- Sake brewer "Nishi no Seki" started brewing sake in 1873. The representative brand name "Nishi no Seki" was named by Yonesaburo II in the 1887's with a great desire and commitment to become the "representative sake of western Japan", "Nishi" meaning west and "Seki" meaning yokozuna. Nishi-no-Seki" is not a fashionable sake, but rather a sake that transcends sweetness and spiciness by developing and inheriting traditional handmade brewing methods and pursuing the original deliciousness of sake with a harmony of five tastes: sweet, sour, spicy, bitter, and astringent. The toji's favorite phrase is "harmony brewing good sake. He has personally posted this phrase in each department of the brewery. Harmony brews good sake (good sake is created when everyone involved in the sake brewing process values the spirit of harmony and teamwork). (Good sake improves the relationship between people...communication). We hope to be such a "Nishinoseki".
