WAKAZE is derived from "wa no kaze," or "Japanese wind," and "wakase," which refers to young brewers in the Tohoku region. No matter how much experience we gain in sake brewing, we will never forget our original intention of "delivering excitement to the world with SAKE. Our never-ending curiosity and passion are the driving force behind us. WAKAZE's Sake Brewing Mr. Koichi Moriya led the sake industry for many years and greatly influenced the two founders of WAKAZE. We have carefully inherited his spirit while making SAKE at two locations, in Japan and France, in accordance with the local climate and modern tastes. KURA GRAND PARIS In the summer of 2019, we established our own brewery "KURA GRAND PARIS" in the suburbs of Paris, France, as a big step toward WAKAZE's vision "Sake for the World. It is the largest brewery in Europe, with 12 2,500-liter tanks on a 450 m2 site, as well as most of the equipment necessary for sake brewing, including a koji room and a pressing machine, all custom-built on site. By locating the brewery in the GRAND PARIS area, centered on Paris, a global center of food culture, the brewery will play a role as a center for the dissemination of SAKE culture. SANGENJAYA BREWERY Obtained "Other Brewer's License" in July 2018 in order to brew our own sake, which we have longed to do. WAKAZE SANGENJAYA BREWERY" was established in Sangenjaya, Setagaya-ku, Tokyo. Based on "natural brewing" utilizing the seasonal climate and the power of natural microorganisms, we are challenging ourselves to brew a variety of SAKE such as Doburoku and botanical SAKE, as well as other SAKE to challenge new possibilities of SAKE. We are always brewing SAKE with new recipes, and we release more than 30 kinds of craft SAKE every year.
