- We named our brewery "Hibi Jozo" (meaning "daily brewing" in Japanese), in reference to our desire to live each day as a good day with our friends and to fulfill our role as a sake brewery in the coming age, by combining the Zen phrase "hibi kore hibi" (meaning "good day" in Japanese) with our desire to brew sake. We aim to brew sake that brings out the smooth and deep flavor of the brewing water, using mainly Yamada-Nishiki grown under contract in the Banshu region of Hyogo Prefecture (former Tojo Town and Yoneda Village), about 60 km from the brewery, and using underground water from the mountains of Kyoto, to brew sake that will enhance the taste of the food.
