- Uwazumi" is a rare unpasteurized sake made by carefully collecting only the supernatant portion of "domuroku," which is nigori sake. Its elegant bubbly taste and "amamokkura*" flavor give it a familiarity different from that of "domuroku. Amamokkura is a dialect word from Shinshu, which means "a taste of umami and sweetness hidden deep inside the original flavor.
