味わいの特徴
Aiming to brew "sake with the blessings of Noto," all the ingredients are grown in Noto, and the rice used is Noto-produced Yamadanishiki, grown under contract. This sake has a good balance of sweetness, acidity, astringency, bitterness, and umami, and you can enjoy all these flavors in a single sip without getting tired of drinking it. The sake has a strong umami flavor, yet is light and refreshing, making it popular with those who do not like strong sake, those who are not used to drinking sake, and people from other countries. In 2014, El Bulli's top sommelier at Madrid Fusion, the world's premier food conference held in Spain, praised the sake for its "rich rice flavor" and served it at the conference. In the following year, 2015, the company was selected as one of the five Japanese sake breweries to exhibit at the event.
