- Aiming to brew "Noto's Blessing Sake" with all ingredients produced in Noto, we use contract-grown Noto-produced Yamadanishiki rice as the raw material. This luxurious bottle is brewed with careful koji molding, and only the best parts of the rice surface are dissolved and pressed. It is a junmai-shu that accompanies meals with a moderate harmony of sweetness, acidity, astringency, bitterness, and umami, all of which can be enjoyed in a single sip. It has a strong umami flavor, yet is light and refreshing, making it popular with those who do not like strong sake, those who are not accustomed to drinking sake, and people from overseas. It has become the centerpiece of our lineup, and we recommend "Takeba Noto Junmai" to those who have not yet experienced Takeba. For a cold sake, we recommend a cool temperature of 15°C. For a warm sake, we recommend a cool temperature of 43°C. When warmed up to 43°C (43°F), the moderate bitterness and refreshing acidity are enhanced, and the taste is crisp. It has a balance of both freshness and mellowness, so it goes well with both light and rich dishes, making it suitable for any meal.
