Yumeshinzou Premium" is a premium plum wine made with the finest plums and junmai ginjo-shu. The use of fully ripened plums grown locally in Maniwa, Okayama Prefecture, produces a rich plum aroma and flavor, and soaking the plums in Gozenshu junmai ginjo-shu gives them a light and gentle mouthfeel and a smooth, easy-to-drink, high-quality flavor. In addition, the heft of the ume is removed by hand to prevent the ume from having a cloying taste, and the water is carefully removed before pickling. The sake is brewed to be not only sweet but also refreshing, with the best balance between the sourness of the plums and the sweetness of the sugar.
