Sake carefully brewed by hand in Azumino, Shinshu, using techniques handed down by generations of toji (master brewers). A sake with a thick body that has been carefully matured in the brewery. In the heyday of light-bodied dry sake, this type of sake was brewed ahead of other sake breweries in Japan, with the aim of "continuing to produce a robust sake that is tasty even for only two out of ten customers. This is a sake with the true flavor of Japanese sake, which is only now beginning to be reevaluated by breweries. The harmony created by the mellow ginjo aroma and the deep flavor unique to junmai can be fully appreciated.
