A second brand launched in 2005 when the current brewer, Yamamoto, started brewing sake himself. It has become the main brand and supports the backbone of the Yamamoto Sake Brewery. The original concept was for Yamamoto to handle the entire process from rice polishing to pressing, but as production increased each year, Yamamoto has taken on a commanding role in recent years, with staff members taking charge of each step of the process.
