- We have crafted this junmai ginjo sake using Yamada Nishiki rice grown in Yoshikawa, Miki City, within the Banshu Tokku-A region, specifically designed to pair well with meals. It is a sake that is gentle yet dry. Characterized by a crisp, composed aroma, it features a clean, crisp mouthfeel where refreshing ruby grapefruit-like acidity blends with a mild umami, culminating in a subtle, lingering bitterness that ties the flavor profile together. Furthermore, this sake achieves its clarity through the *Gravity System*. *Gravity System*: After pressing, the sake is not collected in a primary receiving tank. Instead, using only gravity—and no pumps—it flows directly into a collection barrel located at the bottom of a slope. Bottling takes place the following day in a clean room. This process minimizes stress on the liquid, successfully capturing the sake’s inherent qualities in the bottle.
