- This sake is made with Sanuki olive yeast, which was discovered through joint research between the Kagawa Sake Brewers Association and the Kagawa Prefectural Industrial Technology Center's Fermented Food Research Institute, and is made from ALL Kagawa, from the rice used to make it to the brewing water. The taste is characterized by an aroma of fresh blue fruit, a crisp acidity and a clean taste reminiscent of tropical fruits such as passion fruit and lychee, and a refreshing flavor with a strong rice flavor.
