- FK-6, the world's first yeast that produces high levels of glutamic acid (a flavor component), was developed by the Fukui Prefectural Food Processing Research Institute. Furthermore, the characteristics of this yeast with its vigorous fermentation power are utilized to create a super dry sake. This junmai-shu is super dry, but still full of flavor. When heated, the umami flavor rises even more, and you can enjoy the mellow and powerful taste that is the true essence of sake.
