- Gozenshu is a light nigori sake made from Omachi and Bodai yeast. The first brewing of each season begins with "Gozenshu Bodai Hashiro Nigori," which has been produced since the days of the late Takumi Harada, the master brewer who revived the Bodai Hashiro style of brewing. The silky mouthfeel, with a hint of tailings, will give you a clear impression of the three-dimensional and multi-layered flavors of Omachi and Bodaihashi. This is the oldest and most advanced Bodaihashiro sake. Gozenshu's Bodai-Hashimoto brewing: Based on the description in "Nihon Yamakai Meisho Zukai", Takumi Harada, the previous master brewer of Gozenshu, tried to revive the Bodai-Hashimoto method. 1984 started a trial brewing and in 1986 it was marketed as "Gozenshu Bodai-Hashimoto natural lactic acid honjozo four-step brewing muddy sake".
