Omachi rice, a sake rice variety known for its high proportion of non-standard "grade-out rice" due to its heritage nature. To protect sustainable agriculture in Okayama by utilizing every grain, we released "Gozen-sake Grade-Out Omachi 50 Nama" for the first time in the 2020 brewing season, following trial brewing. Leading initiatives like the "Special Grade Omachi Project," launched to achieve the highest "Special Grade" classification for Omachi, Gozen-sake challenges the limits of sake brewing with premium rice producers and the finest sake rice. At the same time, we responsibly utilize non-standard rice ("dōgai rice") generated during the rice-growing process. Polishing the non-standard Omachi to 50% brings out its distinct character: a clear sweetness and pronounced ginjo aroma. The remarkable freshness and elegance that hit the palate the moment it's tasted is something we believe many will appreciate (it's also recommended as an entry-level sake). Please enjoy a flavor that cannot be fully captured by grade classifications alone.
