- There is something I always think about when I drink sake that I think "this is good sake," not just Otters. It's delicious, but I wish the alcohol content could be a little lower. Otters are usually bottled at around 16% alcohol by volume, keeping an eye on the balance of the sake quality. However, we also want to "drink good food more slowly. If that is the case, it would be better to simply water it down when bottling, but that would inevitably result in a watery taste and aroma that would not be satisfying. That is why "slightly lower alcohol otter" has been a theme for us for 20 years. Our current production manager, Mr. Nishida, tried many times with me as soon as he joined our company. However, we were not able to produce a satisfactory product. However, the brewing team led by Deputy Plant Manager Nagao found a new solution. The solution was to control the temperature and pumping water more delicately in the initial stage of fermentation than in the "polishing and beyond" stage, while keeping the fermentation period at around 35 days. The alcohol content does not exceed 11 degrees Celsius at the end of fermentation. Therefore, after pressing, the wine is bottled without adding any water. This production process has resulted in the creation of Otters Bizen, a well-balanced, aromatic wine with an alcohol content of only 10 degrees Celsius. The word "bi-intoxicating" means "slightly intoxicating. Please enjoy the mild intoxication.
