Delicate bubbles created by natural fermentation This sake is made from Yamada-Nishiki, one of the most popular sake rice varieties, polished to 23%, and bottled from the unrefined mash after the rough fermentation. Only Yamada-Nishiki and koji are used, and no supplemental sugar is added. It is a sparkling Junmai Daiginjo made by the "Naturel" method, which is rare even for Champagne. Before shipping The sparkling sake that has been successfully checked is immediately moved to ice storage to prevent deterioration.
