味わいの特徴
We tried "All white malted rice clear sake" with Jun-Dai class. This is a clear sake made with "all koji x white koji", which has become a standard due to its popularity. The sweetness is due to the use of only rice koji, but the white koji (which produces a large amount of citric acid) balances the sweetness with acidity, resulting in a fresh, fruity sake. Moreover, it is a Junmai Daiginjo-class sake with 48% polished rice. The ginjo aroma is fresh and mild, like green apple or muscat. It has a sweet and sour taste with a good structure.
