- This Junmai Daiginjo-shu is made from 100% Omachi rice, which is a rice suitable for sake brewing produced in Okayama, polished down to 45% (Omachi rice may crack if it is cut down any further), koji made using traditional methods, and carefully brewed and fermented slowly at a low temperature. Fermentation with refined yeast makes it extremely aromatic, and the soft flavor of Omachi rice can be enjoyed. It can be served cold or at room temperature.
