- Kijo-zake is a luxurious sake in which sake is brewed with sake instead of brewing water in the final stage of the three-stage brewing process, the "tome-brewing" stage. It is brewed with our signature "Yamahai Junmai Sake" and brewed with Hamaya Yeast, the brewery's proprietary yeast. It has the rich sweetness of a noble sake, but the citric acid from the oriented white malted rice accents the "acid" in the Hiraizumi style, balancing the sweet and sour tones.
