- In order to make a sake with an alcohol content in the 13 degree range, we cooled and adjusted the unrefined sake to the same level as a daiginjo. The taste is full, sharp, and balanced between rice-derived sweetness and acidity, with the sweetness purposely suppressed to create a dry finish.
