- Kitsune-san, messenger of the god of rice paddies, is crazy about hops! The brewery brews beer with hops, which are essential for beer, in moromi based on the sake brewing process, so that while the backbone is sake, the beer has an aroma and freshness reminiscent of citrus fruits and a finish that is both bittersweet and sweet. The hop used in this brew is Citra. It is characterized by an aroma reminiscent of citrus fruits. The koji and yeast used are standard yellow koji and Niigata G9 yeast, and the ginjo brewing process is carried out at low temperatures. This product is pressed, but not filtered, so there is a small amount of oriole, which gives it a beautiful pink (purple) color due to the polyphenols in the hops.
