- Full-bodied, crisp Nada mainstream flavor and a sublime forest-like aroma When Sawanotsuru was founded in 1717 in Saigo, Nada, the area flourished as a sacred place for sake brewing and was called "Minume. The name "KIMOTO-STRUCTURE Junmai Daiginjo Toshima" was given in honor of this name. It is a "kimoto" style daiginjo made from 100% Yamadanishiki from Hyogo Prefecture, the king of sake rice, polished to a luxurious 45%, and brewed with Nada-no-miyamizu, natural water from the Rokko mountain range. The full-bodied, crisp, Nada-style flavor and forest-like aroma are the result of our pride in brewing with the best of Sawanotsuru's traditional skills and care.
