- A refreshing junmai sake for enjoying oysters. Brewed with rice from Noto grown by utilizing oyster shells, Noto's deep sea water, and wine yeast, this junmai sake is made for enjoying oysters. The coastal area of Noto, facing the calm inland sea, is an area where oyster farming thrives. The beautiful scenery of oyster racks spreading out over the calm sea is a sight to behold. To synergize with the flavor of Noto's oysters, which are full of minerals, we enhanced the acidity and created a refreshing sake with just the right amount of sweetness and umami.
