- This junmai daiginjo-shu is a Craft Sake Week limited edition, unfiltered, unpasteurized, and unpasteurized sake. The rice is polished to 38% "Nojoho" and the middle portion is bottle-aged under ice temperature for about 8 months. The pear-like aroma and rich flavor are rounded and softened by the aging process. This is the first time it has been exhibited, and it will be brought to you in a special bottle.
